Do you remember ambrosia? It used to be commonly found at potlucks and PTA meetings. (I grew up in a small farming community where PTA was as much a social event as a meeting.) For those who are not familiar with it, it is a creamy fruit (probably fruit cocktail) salad with marshmallows and coconut. Every gathering included at least one bowl of it. I think that was probably because the adults savored it, but the kids avoided it like the plague.
I am dubbing my week "ambrosia". It has been an exhausting week. One with some minor bumps albeit soft ones. I had several Dr visits - no bad news, thankfully! - and it seemed that my schedule was not my own. The week just unfolded as it went along. I have just been bumping along trying to land in a soft spot. There has been some coconut. I love coconut, but it just gets in between your teeth sometimes and you have to dig it out. In the wee hours of the morning, our ice maker decided to complain rather loudly. It could have been taken care of rather quickly except for the fact that neither Hubby or I wanted to get out of bed and just do it. Hubby lost. (See, I told you he was my hero!) Then there has been the undercurrent of the strike possibly continuing. ***sigh****
And then, something happens and ambrosia becomes your favorite. You bite into a something sweet and gooey like a marshmallow or a favorite piece of fruit. Yummmmmmmm....We had a wonderful visit with our younger son and daughter-in- law. It was mid-week, and a great time for marshmallows! I was tired, so I was watching TV sitting on our bed. Everyone just joined me. When Hubby came home we were going to move, but he just plopped on the floor. It was most decidedly my favorite event of the week! There was also finding a pair of perfect shoes I needed (OK...disclaimer....Hubby is rolling his eyes again!) marked waaaaay down to an incredible, have-to-have-them price of $7.00. Then there was a free pair of Victoria Secret panties. I NEVER turn those down...gotta love it! Remarkably, this week I was even able to use my windshield wipers for .....yes! the "r" word.....and a light sweater actually felt good one morning.
Maybe I should dig out that recipe and make some ambrosia soon. Maybe not. It's probably completely different from my memories. Why ruin a great memory?
